 Green Bean Salad

Ingredients:
1 lb. green string beans
2 Tbsp. organic, unrefined oil
1 tsp. raw, organic apple cider vinegar
Salt and pepper to taste
1 small onion, shallot, or 3-4 scallions, finely chopped
1 tsp. dried tarragon, oregano, dill, or garlic (optional)
1 sprig of parsley

1. Cut the washed green beans into 1-inch lengths and blanch or lightly steam. Drain and rinse with cold water and let cool.
2. Combine oil, vinegar, salt and pepper in a salad bowl, whisking together well, and add the chopped onion and herbs.
3. Add the cooled beans and toss it all together gently. Leave to marinate in refrigerator for an hour.
4. Toss again before serving and garnish with parsley.


Green Onion Salad Dressing

Ingredients:
1 cup extra virgin olive oil
1/2 cup Lakanto
1/4 cup apple cider vinegar
1/4 tsp. sea salt
1 bunch of green onions (5 or 6)

Put all the ingredients in the blender and blend until smooth. Will be somewhat thick.

Lantako/sweetener and Thankgsiving / warm adaptations

I asked the same question and so Deirdre put another post here on Lumigrate in her Forum (under this same Nutrition section here).  It starts with "Introducing LANTAKO and tells what it is -- a new, healthy sweetener she said is very new and kind of expensive.  She suggested agave or honey as an alternative.  Thanks for asking. 

I have made this recipe over and over since it was posted by Dr Dee for St Pattys day 2009.  I use the Print function here (see the screen/below) and have it with me at the grocery store and give them away ALL the time, turning people on to a GRATE resource when it comes to health information!  2 Birds with 1 recipe, and they'll see all there is at Lumigrate to learn from and follow the links in areas they're interested in.

And yes this sounds good warm! As I understand it, olive oil's beneficial qualities are depleted when you heat it, so it's one to drizzle on after food is cooked.  For Thanksgiving I was going to try it (with leftovers in order to make it different foods), and I bought some healthy dried/cooked onions like go over that 'traditional' bloppy green bean, mushroom soup, onion casserole that I hate to admit I like the taste of.  So I was going to try to make a healthful version of it and use this as the 'base recipe'.  I'll let you know how it goes!  ~~ Mardy

Low Glycemic Index Cole Slaw per Robin Thomas (link)

Thought I'd put a link here to something Robin Thomas did on Lumigrate here in the Recipes forum in early summer 2011.  I went to make the cole slaw recipe she posted, as the previous weekend I had purchased green onions as well as a beautiful cabbage from the organic vendor at a farmer's market.  But then I decided the green onions needed to used up and so decided to modify the recipe to include them and know by heart the green onion salad dressing recipe here that goes so well on green beans and anything else you can think of, SO I tried it on cole slaw and it was really good!  I chopped up some chicken breast that I'd grilled the night or two before, as I'm one who does best with protein with most of my meals, and so like the combination of recipes.  

(I will also put a link to this recipe thread over at the Robin Thomas Low Glycemic Eating post here in recipes at Lumigrate.  LOVE the collaboration!  Wish Dr Dee/Deirdre, Robin, and I and some others could get together in person and have a lovely cooking experience!  Maybe until then we each can do something in our own communities, whether that's a neighbor or a friend or family, and look at eating well and reinforcing healthier habits with those we know.)
